Porcini and Chanterelles Risotto
Bought a bag of porcini & chanterelles mushrooms last month. I've never eaten risotto. Hence, made Porcini,Chanterelles & Bacon Risotto for dinner today.
Ingredients
Carnaroli
Steaky bacon
Diced chorizo (optional)
Chopped onion
A tbsp of olive oil
Dry chanterelles & porcini mushrooms
Mushroom stock
Chicken stock
Grated Parmigiano Regggiano cheese, to serve
